Glöet Sabayon with berries
GLÖET SABAYON WITH BERRIES5 egg yolk
1 1/2 dl sugar
1 1/4 dl Glöet white sparkling glögg
For decorationwaffle biscuits
Put the glasses in the refrigerator to chill. Prepare Sabayon. Put a medium bowl in the water bath. Add the egg yolks and sugar to the bowl, whisking constantly, and whisk well until fluffy. Pour in the Glöet white sparkling glögg and continue whisking until the foam becomes thicker.
Next, put the berries into glass bowls and pour the Sabayon foam over the berries.
Garnish with waffle biscuits and powdered sugar.
Before serving Sabayon, use a kitchen blowtorch to create a crispy crust.
